Lamington cake

Ingredients

 2 x 440g pkts Green's Golden Butter Cake mix
4 Coles Brand Australian Free Range Eggs
300ml milk
120g butter, softened
250g Nestlé Bakers' Choice Melts Dark
1 cup (250ml) thickened cream
1 1/4 cups (100g) McKenzie's Desiccated Coconut
1/3 cup (110g) Coles Brand Raspberry Jam
Halved strawberries, to serve

Method

Step 1

Preheat oven to 180C. Grease and line two 20cm round cake pans. Make 2 cakes using the Green’s Golden Butter Cake mix, eggs, milk and butter following packet directions.

Step 2

Meanwhile, stir Nestle Bakers’ Choice Dark Melts, cream and 1 icing sachet from the cake mix packet in a heatproof bowl over a pan of simmering water (make sure bowl doesn't touch water) until smooth. Chill for 10 mins to thicken.

Step 3

Spread the McKenzie’s Desiccated Coconut over a tray. Trim the top of 1 cake to flatten. Spread side with icing, then roll in coconut. Transfer to a serving plate. Spread top with jam. Brush side of remaining cake with icing, then roll in coconut. Spread top with icing. Sprinkle with coconut, gently pressing in to set. Place on top of first cake, coconut-side up. Top with strawberries.
