Ingredients
16 slices raisin bread, crusts removed30g butter
800g can apple pie fruit
1/2 cup craisins
1 teaspoon ground cinnamon
2 egg yolks
2 eggs
1 cup milk
1/2 cup caster sugar
1 teaspoon vanilla extract
pure cream, to serve
Method
Step 1
Preheat oven to 180°C. Lightly grease a 22cm round cake pan. Line with baking paper.
Step 2
Spread both sides of bread slices with butter. Cut slices in half diagonally to make triangles.
Step 3
Place one-third of the slices, in a single layer, over base of pan. Combine apple, craisins and cinnamon in a bowl. Spread half the apple mixture over bread base. Repeat with remaining slices and apple mixture, finishing with a bread layer.
Step 4
Whisk yolks, eggs, milk, sugar and vanilla together in a medium jug. Pour egg mixture over bread. Set aside for 10 minutes to allow mixture to be absorbed.
Step 5
Bake for 40 to 45 minutes or until custard is set and bread lightly browned. Stand for 10 minutes. Serve warm sprinkled with icing sugar and drizzled with cream.
